New Zealand Spinach a.k.a perennial spinach Perennial spinach or Malabar spinach, is a great garden addition due to its hardiness and continuous yield. Though not true spinach, it’s used similarly in cooking. Plant from early spring to late summer for prolonged harvest. These greens can be used in your recipes, either raw (after blanching) in salads or cooked in stir-fries, quiches, and other dishes.
Instructions
Soak seeds for 24 hours before planting. Sow half an inch deep, 12-18 inches apart, with rows 2 feet apart. Germination takes 10-20 days.

Tetragonia tetragonioides is a leafy plant native to Australia, New Zealand, Japan, Chile, and Argentina. Its history has been said to be linked to Captain Cook, who collected it to combat scurvy in the 18th century, and Joseph Banks, who took seeds to Kew Gardens, leading to its wider cultivation in Europe and North America as Botany Bay greens.
